PICKLED SALMON

The following recipe is great for appetizers, hors d’oeuvres, or a delicious, healthy snack. It works for Salmon or Sablefish (blackcod).

INGREDIENTS

  • 1 pound fish
  • 1/2 c salt
  • 1 c white vinegar
  • 1/2 brown sugar
  • 1/3 c apple cider vinegar
  • 1 T Pickling spice
  • 1 white or red onion

 

DIRECTIONS

Skin and cube raw fish.

Mix ½ cup Salt and 1 cup of white vinegar

Add fish into mixture.

Let sit 2-3 days for salmon,  4-5 days for sablefish.

Rinse out fish mixture for 1 hour in cold water.

Combine the following:

  • ½ cup of brown sugar (less if you think you want it less sweet)
  • 1/3 apple cider vinegar
  •  2/3 distilled vinegar
  • 1/2 c water
  • 1 Tablespoon of Pickling spice
  • White or red onions (sliced)

Layer rinsed fish cubes & onion in pint glass canning jars

Then poor liquid spice mixture into jars over the salmon and onions

Seal jars closed and let sit for at least 24 hours before consuming.

Rotate upside down several times during sit time.  Eat within 3 weeks.
