New to our menu is premium Sashimi Grade Line-caught Albacore Tuna caught by a co-op of fishermen off the coasts of Oregon and Washington.
LINE CAUGHT. Our albacore is line caught, one at a time to allow the utmost attention to quality.
PERFECT FOR SUSHI. Their oil content can surpass 20% which gives them a surplus of healthy fats which is perfection in a sushi roll (and surpasses the healthy oils of net caught and canned Albacore). This Albacore ideal seared, or as sashimi. Because of its high healthy fat and oil content, this Albacore is easier to prepare. Some people described the texture as ‘velvety’ or ‘buttery.’
BEST CHOICE. North Pacific Albacore is ranked “best choice” by Seafood Watch, owing to its plentiful, well-managed population and the methods by which it’s caught. With a higher oil content than our Yellowfin Ahi tuna, it has a light lean and buttery flavor that you can enjoy both raw and cooked.

Where do Albacore Tuna come from? There are sources from many different parts of the world. But the line-caught Albacore from the Pacific Northwest is considered by many sushi chefs as the finest tasting and most healthy. The fish are harvested between June and October when they are following their prey up to 250 miles from the coast. Albacore bulk-up for winter during the summer eating up to a quarter of their weight every day in nutrient dense anchovies and sardines lending to it’s higher oil content.
There is other line-caught Albacore Tuna, but unique to this source is their commitment to quality. The members of this fishing cooperative prioritize getting the fish in quickly, bleeding it properly, and blast freezing it at -40F while hanging it from its tail. Fast packing and timely processing finish of this commitment to keeping the fish clean and of the highest quality.
